Tomato Jam Bruschetta
The joy of caramelized onions, plum tomatoes, and fresh thyme on a toasted baguette…Try Chef Peuries's Tomato Jam Bruschetta.
INGREDIENTS
1 French Baguette
½ cup of EVOO (Extra Virgin Olive Oil)
1 lb. of Roma tomatoes, sliced
½ lb. yellow onions, julienned
4 Tbs of butter
½ cup of brown sugar
Fresh thyme
1 cup of vegetable stock
Sliced the baguette into ¼ thick slices, brush with EVOO, and bake for 10 minutes at 365 degrees.
In a saucepan melt the butter, add the onions, and allow to carmelize for about 30 minutes, adding stock in between stirring to deglaze, 15 minutes add the tomatoes and thyme, and continue to cook on low heat to allow both vegetables to continue caramelizing, continue to deglaze with veggie stock
Add brown sugar and continue to cook on low
Remove the ingredients into a mixing bowl, using a hand blender to create a pasty texture
Spread the mixture on each slice of bread, Enjoy!
