BLT Bruschetta with Herb Mayo

The classic BLT goes high society with Chef Peurie’s BLT Bruschetta with Herb Mayo.

INGREDIENTS

1 French bread baguette

½ lb. of Roma tomatoes, dice

½ lb. of shredded lettuce

1 lb. of bacon

4 oz. of mayo

2 oz. of fresh herb, oregano, basil, etc.

½ cup EVOO (Extra Virgin Olive Oil)

  1. Slice the French bread on a bias about ¼ inch thick

  2. Lightly brush each slice with EVOO, and bake for 10 minutes at 365 degrees.

  3. Place the pound of bacon on the baking sheet, and bake 10-15 until crispy, when done, drain the fat, and chopped the bacon into bits

  4. Spread each slice of bread with the herb mayo

  5. Top with bacon bits, shredded lettuce, and diced tomatoes…Enjoy!
